Ingredients
20 minutes or less
Makes 8-10 cookies
- 3/4 cup cold butter cubed
- 1 cup brown sugar
- 1/4 cup raw sugar
- 1/4 cup caster sugar
- 2.5 cups cake flour
- 2 eggs
- 1/2 cup almond meal
- 1 TSP cornstarch
- 1/2 TSP baking soda
- 1 TSP salt
- 1 TSP vanilla essence
- 3/4 cups milk choc chips
- 3/4 cups white choc chips
- 1/2 cup dark choc chunks
- 1 cup walnuts chopped
Method
- Preheat oven to 200ºC.
- In a large bowl, using electric beaters, cream together the COLD butter, vanilla and sugars (about 5 min).
- Add in the eggs one at a time, mixing well after each one.
- Sift in the dry ingredients and mix until just combined (avoid over mixing).
- Stir in chocolate and walnuts.
- Separate dough into large balls and place on lined baking tray (MIX WILL MAKE 8-10 COOKIES).
- Bake for 9-12 minutes or until golden.
